Ingredients

The ingredients you’ll need for this recipe are:

  • 1 cup of butter (room temp)
  • 2 cups of sugar
  • 4 eggs (preferably large)
  • 1 teaspoon of baking soda
  • 1/2 cup of buttermilk (ensure to shake well)
  • 3 1/2 cups of all-purpose flour
  • 1lb of chopped dates
  • 1lb of chopped orange slice candies
  • 2 cups of chopped pecans
  • 1 1/4 cups of flaked coconut
  • 1 cup of orange juice (preferably fresh)
  • 2 cups of confectioners’ sugar

Recipe

Now all you need to do is:

Step 1: Prepare

Gather all of the ingredients above. Ensure you preheat your oven to 250F before you begin making the cake. You’ll also need to grease and flour a tube cake pan (preferably 10 inches in size).

Step 2: Make the batter

In a bowl, add your sugar and butter. Cream the two together until your mixture reaches a fluffy consistency. Now add your eggs individually. Do not add the next egg until the previous egg has been completely combined. In a separate bowl, add the buttermilk and baking soda. Mix well before adding to your butter mixture.

Step 3: Flour nuts & fruit

In a separate bowl, add the flour, pecans, dates, and orange slice candies. Mix well and gently toss to ensure that each piece is completely coated in flour. Add this mixture to your previous mixture, along with the flaked coconut. Stir well. You may find using your hands easier at this point, as the mixture will now be extremely thick.

Step 4: Bake

Place the batter into your prepared baking pan and ensure it’s evenly spread. Place in the center of your oven for around two and a half hours.

Step 5: Prepare the glaze

Add the confectioners’ sugar and orange juice to a bowl. Stir well until completely blended. Do not leave the cake to cool once out of the oven. Pour the mixture all over the cake until completely covered. You can make tiny holes with a toothpick or skewer and pour the mixture inside the cake to add more flavor. Leave overnight.

Step 6: Enjoy!

Once ready to eat, invert the cake onto a plate and slice. Your cake is now ready to enjoy!
