Step 1:  Prepare the insert and freeze it

For about 5 to 10 minutes, pour the sieved mixture over the chocolate until its fully melted. Using an immersion blender, fully submerge into the liquid to avoid bringing in any air bubbles.  Blend this mixture until it’s perfectly smooth.

Step 4

Allow the mirror glaze to cool down to at least 98 degrees F.  Be sure to stir periodically to keep a film from forming at the top.

Step 5

Ensure that the frozen cake has smooth edges.  There should be no holes, rough edges, or bumps. This is because the mirror glaze should have shiny and reflective surfaces and any imperfection will clearly show.

Step 1

The ready glaze should be between 90 and 94 degrees F.  At this point, pour it very carefully without allowing any bubbles since the glaze is viscous and any bubbles formed will not be able to pop on their own unless you manually pop them creating more mess.

Step 2

Place your frozen cake on a glazing rack and smoothen out all imperfections with your hands as gently as you can.

Step 3

Ensure you have some excess glaze before pouring it all out so you don’t get to the end and you run out before covering the cake fully. Remember, once poured you cannot pick it up.  You can save excess glaze and store it in a vacuum-sealed container for future use.
