Whenever I go to a theme park, it’s tradition for me to order a funnel cake. I’m not sure why, but funnel cake has always just screamed “theme park food” to me, and a visit doesn’t the feel same without one.

Whenever anyone asks me to describe a funnel cake, it feels impossible to describe it in a way that does it justice. It’s a sweet treat that’s most commonly eaten in the US. You’ll regularly see people eating funnel cakes at theme parks, carnivals, and funfairs.
They’re crispy, fried…and somewhere between a doughnut and churros. It’s made by frying batter, and gets its name from having to use a funnel within the recipe (yes, it really is that obvious!).
What is banana pudding?
Banana pudding is simply a flavor of instant pudding mix that’s used in this recipe. Usually, you just add liquid to an instant pudding mix and you’re left with a simple, tasty dessert. However, the banana pudding funnel cake is fried and covered in sugar (as always), but then topped with banana pudding and sliced bananas. You’ll definitely be going bananas for this funnel cake!

- whole milk

Let’s move on to the reason you’re here – how to make a banana pudding funnel cake. It’s worth noting that you can use any flavor instant pudding and any fruit in this recipe. But banana is one of my favorites! This recipe is inspired by The Six Figure Dish.
Ingredients
The ingredients you’ll need for this recipe are:
- 2 cups of pancake/baking mix
- 4 cups of cold whole milk
- 2 eggs
- 1 teaspoon of pure vanilla extract
- 1 packet of banana pudding mix
- powdered sugar (topping)
- 3 sliced bananas (topping)
- wafers (topping)
- oil (frying)
Recipe
Now all you need to do is:
Step 1: Prepare
Gather all of the ingredients you need for this recipe. Grab your oil and pour around an inch into a pot or pan you can fry the funnel cake in. Heat the oil to around 355F.
Step 2: Make the batter
Grab a bowl and add the vanilla extract, eggs, 1 cup of whole milk and the pancake mix. Mix well until completely combined. If you have a squeeze bottle and a funnel, this next part will be easy! Just use the funnel to pour to batter into a squeeze bottle. If not, you can use a cup, but it’ll much more difficult and you’ll need to have control when pouring the batter.
Step 3: Fry the batter
Once the oil has reached it’s temperature, pour the batter into a circle shape first. Once you have your circle, drizzle the batter all over to recreate the look of a traditional funnel cake. Leave to fry until golden on each side, this should take no longer than around 45 seconds.
Step 4: Toppings
Leave to cool and make as many funnel cakes as your batter will allow – you may need to use more oil at this point. While the funnel cakes are cooling, add the banana pudding mix and three cups of cold milk to a bowl. Mix well with a whisk until it reaches a pudding like texture. This will take a while! Once you have your pudding ready, decorate the funnel cakes as you wish. Dust with powdered sugar, add the layers of pudding, along with the slices of banana. And then crush your wafers to sprinkle over the top. Enjoy!
